Savoury Quesadillas with chunky Guacamole.
How’s this for a quick, easy, kid friendly, flash in the pan lunch, dinner or appetiser?
Your family & friends will love this meal, it’s super tasty & can be served as a meal or a snack. I like to serve with a salad, salsa or guacamole or both! Goes down extremely well with a margarita in hand!
The tortillas are lightly pan fried until golden & crispy, the filling can be just about anything, vegetarian, chicken, seafood or meat based combined with mixed vegetables & cheese. The skies the limit! You could exchange the cheese for goat’s cheese, cottage cheese, feta cheese or vegan cashew cheese. Add beans, tofu, leftover roast vegetables – really it’s up to your imagination & taste buds.
Quesadilla’s originate from Mexico – the name is derived form “tortilla” & the Spanish word for cheese “queso”. Either a flour or corn tortilla is used.
For this recipe I used the following
Shredded cooked chicken
Small amount of grated cheese
Spread salsa onto one tortilla, place shredded chicken on next & top with cheese. Place another tortilla on top. Don’t put too much filling in or they will be hard to flip.
Put a small amount of coconut oil in a pan & on low slowly pan fry until golden. Flip & cook other side. Slice into quarters.
I served with guacamole (recipe below) & some rocket as I love the taste.
Ideas for filling ingredients:
Sauteed onions, mushrooms, capsicum Chillies, jalapenos, olives Roast pumpkin, zucchini, garlic, sweet potato Spinach, kale, refried beans, black beans, fresh herbs
Smashed Avocado Guacamole.
Guacamole is made up of two Aztec words, ahuacatl – avocado & molli – sauce.
I like to mash up the avocado with a fork leaving it slightly chunky.
1 large ripe avocado
Large handful of roughly chopped coriander
Lime or lemon juice to taste
1 Tbsp of sour cream or greek yoghurt (optional)
1/2 a finely diced red onion
1 x finely chopped ripe tomato or 1 tbsp of salsa
Finely chopped chilli or a dash of chilli sauce – to taste
Salt & Pepper.
If I was going to store in the fridge for later I wouldn’t add the chopped tomato until I was ready to serve. Will serve 2-3 people, for larger groups adjust the amounts accordingly.
